Nestled in the heart of the Kochersberg, the “breadbasket” of Alsace, the Restaurant à l’Aigle stands proudly in the picturesque village of Pfulgriesheim. Since 1881, the Restaurant à l’Aigle has been the setting for an exciting family adventure. Generation after generation, the Roth family has preserved and passed down a culinary tradition that is the pride of the village. From Michel and Eva to André, Marthe, and then their daughter Lydia and her son Antoine, each family member has left their mark while honoring the legacy of their ancestors.

The tarte flambée is a true symbol of Alsatian culinary heritage. Prepared with a thin, crispy crust, it is topped with a mixture of crème fraîche and fromage blanc, thinly sliced onions, and bacon bits, all sourced from local producers.
